partners with some of
the finest chateaux in the Pyrenees-Orientales region:
We offer our guests a selection
of fine wines from our partner Chateau in the region.
Enjoying a Mediterranean
climate on ground covered by the appellations of Côtes du Roussillon, Muscat de Rivesaltes
and Rivesaltes, the 24-hectare vineyard surrounds Chateau
Valmy's cellars. Situated in the foothills of the Albères
massif, the terroir is composed of a mosaic of soils resulting
from the folding of the Pyrenean chain.
Four dry wines and two vins doux naturels
make up the prestigious range of Chateau Valmy wines.
Constant research and commitment to quality has already begun
to bear fruit: Since the first vintage in 2000, the number
of awards garnered by their wines has continued to grow.
Top quality packaging and avant-garde label designs complete
the exceptional character of these great wines.
AOC Côtes du Roussillon - Aged
in oak barrels
Only the finest selected Syrah, Mourvèdre and Grenache
Noir, cultivated on soils in a granite arena and harvested
by hand with the greatest care, are used in this cuveé.
The traditional vinification is combined with a long maceration.
Following twelve months of barrel aging in air-conditioned
cellars, the wine is placed in numbered bottles after a simple
filtering.
The deep, dense red colour presages
a generous and elegant wine, with aromas of ripe fruits
that open out at depth with
oak accents. Wine-lovers can lay down this wine worthy of
aging to discover its full complexity. To appreciate fully
the structure and fruit of this exceptional wine, we advise
you to serve it at around 18°C, it will make a perfect
companion to your gastronomic meat dishes and delicately
refined cheeses.

Vin de Pays des Côtes Catalanes
Vinified in oak barrels
Beautiful white roses adorn the entrance
to the vines and give their name to this cuveé made from a blend of
Viognier, Marsanne and Grenache Blanc, planted on the estate’s
coolest, pebbly terroirs.
Low yields, manual harvesting using 10 kg crates, a continuous
sorting and enormous respect during the execution of the
harvest allows us to obtain, after vinification and maturing
in oak barrels, this pale gold wine with silver tints. Delicate
vanilla aromas presage complex, balanced flavours and a beautiful
length.
This cuveé perfectly complements
the iodized accents of freshly caught fish, cooked on the
skin.

AOC Côtes du Roussillon
A preponderance of Syrah accompanied by Grenache Noir and
Mourvèdre. Low yields are compulsory on the pebbly
terraces with their shallow soils. Harvesting is done by
hand using small crates.
Partly vinified by carbonic maceration,
temperatures are constantly controlled in order to maintain
the deep purple
colour of this cuveé with its fruity character. The
balance in the mouth is characterized by a wholly supple
and round structure.
Its charming nature means it complements both red meats
and, if lightly chilled, simply prepared fish dishes.

AOC Côtes du Roussillon
On our well exposed slopes, Syrah,
Grenache and Mourvèdre
mature optimally and are then harvested by hand using small
crates in the freshness of the morning.
After sorting, the harvest is fed into the vat by gravity
for a short maceration. Made from a gentle pressing, the
first pressed juice is blended with the run-off juice; the
fermentation is temperature-controlled.
It’s a pink that’s both bright and deep with
glistening reflections.
Cheerful, fruity aromas dominate this characterful blend,
with its rich and refreshing flavours.
Serve well chilled, the light structure goes equally well
with a plate of Collioure anchovies, Serrano ham, or even
spicy dishes.
